Zucchini Spice Cake

This recipe was shared as part of my Quick Dinner series on Instagram. These dinners can be made with minimal ingredients, using what I keep stocked in my kitchen.

If you’re looking for “rules,” you won’t find many here. I like to focus on simple lifestyle habits, which is evident when it comes to my lunch options.

Believe or not, being a Texan, there are some days I want a sandwich encased in a buttery, warm flour tortilla. That makes it a quesadilla right?! What I know to be a traditional, simple sandwich received a lil’ Tex-Mex twist. This Bacon Tomato Avocado Quesadilla comes together in less than 20 minutes, including preparation.

Ingredients

  • 4 flour tortillas
  • 2 Tbsp. salted butter, softened
  • 4 slices of cheese
  • 8 slices of cooked crispy bacon
  • 2 Roma tomatoes, sliced
  • 1 large avocado, pitted, peeled
 

Instructions

  1. Spread 1-1/2 tsp of butter on one (1) side of each tortilla.

  2. With the buttered side down, we’re going to fill one-half of the inside of the tortilla. Divide the cheese slice in half and lay on the inside. Top with 2 bacon slices, tomato, and 1-2 scoops of mashed avocado. Fold each tortilla in half over the filling.

  3. Heat a 12-inch skillet over medium heat. Place quesadillas into skillet. You can heat up to 2 at a time. Cook until golden brown on each side and cheese is melted, about 5-6 minutes per side. Repeat with remaining quesadillas. Cut quesadillas in half, or into 4 wedges for a smaller portion.
