Onion Three Cheese Pie

This recipe was shared as part of my Quick Dinner series on Instagram. These dinners can be made with minimal ingredients, using what I keep stocked in my kitchen.

There is only so much holy trinity you can make over time with a bunch of onions given to you. When given a surplus of produce and pantry staples, I think about times when my grandparents would receive boxes from farmers and local growers looking to gift the food before it went rotten or spoiled. I often recall my grandmothers going into the kitchen and making the most simple dishes full of flavor to share with family & friends and anyone in the community who was hungry.

When feeding people with various tastebuds, the simple, flavorful dishes were always a hit! And, keeping that in mind, I put a few of the bagged onions to good use in this Onion Three Cheese Pie.

Ingredients

  • 9” Pie crust
  • 2 Tbsp. melted butter + 2 Tbsp. olive oil
  • 2½ c. sliced onions
  • 1½ c. milk
  • 3 eggs, slightly beaten
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ½ lb. cheese finely grated (2 c. smoked gouda, 2 c. gruyère, 2 c. medium cheddar)
 

Instructions

  1. Place pie crust in baking dish. Set in refrigerator until ready to use.

  2. Preheat oven to 325°.

  3. Over medium heat, melt butter in a large skillet. Pour olive oil in skillet to heat.

  4. Sautè onions in butter & olive oil until light brown and tender; spread over pie crust in layers.

  5. Scald milk; add to eggs, stirring constantly. Stir in salt, pepper, and 1 cup of each cheese. Pour over onions.

  6. Sprinkle remaining cheese over onion mixture in layers.

  7. Bake for 50 to 55 minutes. Garnish with parsley
