Tender Salsa Beef with Melinda's Mango Pepper Sauce
As the holiday season approaches, I know that my free time becomes limited. Between balancing a 40+ hour work week in the office, late night baking in the Bakeshoppe, and tending to weekly chores around the house, I have to get creative and smart about dinner options. This many times means, cooking a dish l that can be eaten as leftovers for a day or two which always leads me to pull out my crockpot for a hearty meal. And while I’m all for convenience, it will never be at the expense to sacrifice flavor. Enters Melinda’s Foods….
A couple of weeks ago, I received a box of pepper sauces from Melinda’s Foods, and I just knew I had to incorporate them into my meals, rather than dashing a couple of drops on top of my food. I love that Melinda’s Pepper Sauces are packed with flavor through wholesome ingredients, as opposed to just being hot (like spice hot). One of the first recipes I was determined to try this out with was my Tender Beef dish, a fall favorite in my home.
So here’s a home favorite that spices up the classic beef stew, and is easily kid-friendly and approved.
1 1/2 lbs. beef tips, or use beef stew meat, cut into 3/4-inch cubes.
2 cups salsa (for a kid-friendly version, use mild salsa)
1 tbsp. brown sugar
1 1/2 tbsp. Melinda’s Mango Pepper Sauce
1 garlic clove, minced
4 cups cooked brown rice
In a 3-qt. slow cooker, combine the beef, salsa, brown sugar, pepper sauce and garlic. Cover and cook on low for 8-10 hours or until meat is tender. Using a slotted spoon, serve with rice.
